Cooking with desi spices, wherever you live

Most Pakistani food needs only about a dozen spices, and every one has a supermarket name, a desi-shop name and a Roman Urdu name, which is why recipes and shop labels so often confuse. Kalonji is nigella, ajwain is carom, saunf is fennel and shahi zeera is black cumin; kalonji and black cumin are not the same thing, even though shops sometimes mix them up.

When you cannot find a spice, the best substitute depends on what it does in the dish. Sour spices like amchur and anardana can be swapped for lemon, tamarind or sumac. Aromatic whole spices like black cardamom and tez patta can be rebuilt from green cardamom, cinnamon and cloves. A few, like kala namak and pathar ka phool, have no true substitute, and each guide says so plainly.
