Where to start with Pakistani food

Pakistani food is built on wheat breads, slow-cooked meat, rice dishes and a love of grills, with influences from Mughal, Punjabi, Persian and Afghan kitchens. It overlaps with North Indian food but has its own classics: nihari for breakfast, Karachi biryani, chapli kebab and sajji.

If you are new, start with what to order at a restaurant and the mild dishes list, then read about nihari, haleem and the regional food of each province. If you are cooking for Pakistani family or friends, the in-laws guide has a menu that always works.
