Kulcha is the soft, round bread of street breakfast stalls: torn and dipped into spicy chanay, often with a fried egg on the side.

This version uses no yeast, just yogurt and baking soda, so it suits a weekend breakfast made the night before or the same morning.

Method

  1. Make the dough. Mix the flour, baking powder, baking soda, salt and sugar. Add the yogurt, milk and oil and enough warm water to make a very soft dough. Knead 5 minutes.
  2. Rest. Brush with oil, cover and rest 2 hours at room temperature.
  3. Shape. Divide into 8 balls. Press nigella seeds and coriander on top of each and roll into 15 cm ovals.
  4. Tawa. Wet the underside with water and lay it on a hot tawa, wet side down. Cook until bubbles form, about 1 minute.
  5. Flame or flip. Turn the tawa upside down over the flame (the kulcha will stick) and cook the top until spotted, or flip it and cook the other side.
  6. Butter. Brush with butter and serve hot.
💡 Let the dough rest the full two hours. Yogurt and baking soda need that time to soften and lightly raise the dough, which is what makes kulcha pillowy without yeast.
