A bowl of small curled golden kulkuls with a white sugar glaze, on a Christmas table with a candle

Kulkuls are small curled dough shells, fried crisp and coated in sugar syrup: a Christmas sweet made by Christian families in Pakistan and India.

For many Christian families in Karachi, Lahore and Goa, Christmas means a plate of homemade sweets, and kulkuls are always on it.

Shaping them is slow but fun, and it is traditionally a job for the whole family in the days before Christmas.

  1. Make the dough. Mix the flour, semolina, salt and baking powder. Rub in the ghee, add the egg and enough coconut milk to make a firm, smooth dough. Rest 20 minutes.
  2. Shape. Pinch off marble-sized pieces. Press each onto the back of a fork (or a clean comb) and roll it off so it curls into a ridged shell.
  3. Fry. Fry in medium-hot oil in batches until golden and crisp, about 3 to 4 minutes. Drain well and cool.
  4. Make the syrup. Boil the sugar and water with the cardamom until it reaches a thick, sticky one-string stage.
  5. Coat. Take the pan off the heat, add the kulkuls and stir until the syrup turns white and coats them. Spread out to dry.
💡 Fry on medium heat, not high. Kulkuls must cook through to the centre to stay crunchy for days; on high heat they brown outside and stay soft inside.
