Quick fix

Make a stiff dough with enough moin (oil or ghee rubbed into the flour until it holds together when pressed), rest it, seal the samosas well, then fry them on medium-low heat until the pastry firms and blisters, finishing on medium for colour. Drain upright on a rack.

How to fix itاسے کیسے ٹھیک کریں

  1. Drain properly. Stand samosas upright on a rack or in a colander for a few minutes; much of the surface oil drips off.
  2. Re-crisp. A few minutes in a hot oven or air fryer (180°C / 350°F) crisps them and melts out some oil.
