Tips for measuring seviyan
- Broken seviyan is light and full of air: a US cup holds only about 55 g. A 150 g packet is about 3 cups.
- For sheer khurma, use about 50 g of seviyan per litre of milk for a pourable khurma, or up to 100 g for a thick one.
- Roasted (brown) and plain seviyan weigh the same. Unbroken nests do not fit a cup well; weigh those.
