Tips for measuring suji
- Suji pours like sand, so it packs evenly and a cup weighs about 170 g. Fine and coarse suji weigh almost the same.
- For suji ka halwa the classic ratio is 1 cup suji, 1 cup sugar, 1 cup ghee and 3 cups water (or milk), so getting the cup right matters.
- In the UK suji is sold as semolina; in the US look for "farina" or "cream of wheat" if your desi store is out.
